SAUERKRAUT SALAD
1 quart sauerkraut ½ c. vinegar 1 c. sugar ½ tsp. salt ½ tsp. pepper ½ small green pepper, chopped 1 c. chopped celery ½ c. chopped onion 1 T. chopped parsley Pour off juice from prepared sauerkraut. Boil vinegar, sugar, salt, pepper and parsley, stirring until sugar is dissolved. Toss sauerkraut, green pepper, onion and celery in a glass or plastic bowl with a cover. Pour vinegar mixture over kraut mixture, Cover tightly and shake to mix well. Refrigerate overnight.
