Chicken Cheddar'
CHICKEN CHEDDAR' 3 T. butter or margarine 1 ½ lb. skinned, deboned chicken breasts 1 c. cream sherry 1 ½ c. shredded cheddar cheese ½ c. no-fat sour cream 3 T. corn starch ¼ c. water ½ c. chopped onion 1 lg. can mushroom pieces drained or 8-10 large fresh mushrooms sliced salt and pepper to taste Cut chicken into bite-sized pieces. In a large frying pan, brown chicken in butter or margarine. Remove chicken with a slotted spoon: Save. Add wine to pan: Stir over low heat to loosen drippings. Add sour cream and cheese: Stir until melted. Mix corn starch with water: Stir until smooth. Add mixture to pan and stir until thickened. Add chicken, onions, mushrooms, salt and pepper. Cover and simmer ½ hour on low heat. Serve over wide noodles.
