Potato Soup With Dumplings(very easy)
I don't have exact measurments because I've been making it so long I haven't used a recipe in years but here it is. about 10 large potatoes,diced not too small 1small onion,chopped 2 tblsp.dried parsely salt and pepper boil those ingredients until potatoes are done add 1 can evaporated milk and bring back to a boil Make dumpling mix while you are waiting 2or3eggs add flour until very stiff and drop by spoonfuls into boiling soup. Let cook for 5 minutes and let sit for a while before you serve it just because it really holds the heat.
Do you add the milk to the water you were boiling the potatoes in? Can't wait to try this out. I even have all the ingredients!
Yes Dana,You add the milk straight into the pot with the potatoes and everything.I also forgot to tell you that when you add the milk you also add 1 stick of butter straight in the pot.I hope you haven't made it yet.
Yummm, an entire stick of butter. Now you're talking! Nope, not made it yet. DH is complaining that he's been eating soup for 5 days now. I'll wait until the next cold snap (which from the looks of the clouds might be today ) I think I will add some bacon to mine too.
this is a german style potatoe soup ... for along time i thought everyone made thiers like this ...was what i was raised with lol i also sprinkle some cheddar cheese on top ... so much for low fat but is soo good... and dana u could alway just use it as a side dish in a mean stead of a main course my hubby dont complain so much then ...
question about this soup. 10 potatoes is quite a bit. How far above the potatoes should the water come? I'll have to have a H-U-G-E pot for this. (usually I just cook 3 for our mashed potatoes or buttered potatoes.)
Sorry it took me so long to get back Dana. The water should come about a 1/2 in. over the potatoes because you are going to add the whole can of milk.You can use the amount of the potaoes according to your pot.I always make a huge pot so that we can have leftovers.This is a dish that just gets better the longer the flavor soaks in.
