8 cups milk 12 tbsp. hot cocoa mix 1/4 cup sugar 3 oz milk chocolate chips (about half a pkg.) 3 drops peppermint extract 2 tbsp. butter ½ tsp. salt ½ cup corn starch 1 cup water cinnamon marshmallows or whipped cream In a large heavy saucepan heat milk over low heat. When warm, add cocoa mix, sugar, milk chocolate chips, peppermint extract, butter and salt. Stir until chips melt, and are incorporated into the milk mixture. In a small container, mix corn starch and water. Add to chocolate mixture slowly, stirring until it reaches desired consistency. Add only as much as you need. Serve hot in bowls with a dusting of cinnamon over a few floating marshmallows, or swirl of whipped cream. Serves 6 - 8
